Winter is here and I’m craving warm, comfort food! This soup recipe is just that! Takes 35 minutes to prepare and is super quick and easy! You may want to consider doubling the recipe– I always do! It reminds me of a cheesy potato soup without all the carbs!
Cheesy Cauliflower Soup
Servings 8
Ingredients
- 1 Head Cauliflower Broken into parts
- 1 Medium Carrot Shredded
- 1/4 cup Chopped Celery
- 1/4 cup Chopped Sweet Onion
- 2 1/2 cups Water
- 2 tsp Chicken Bouillon
- 3 tbsp Butter
- 3 tbsp Flour
- 3/4 tsp Salt
- 1/8 tsp Pepper
- 2 cups Milk
- 1 cup Shredded Cheddar Cheese
- 1/2 cup Bacon Optional
Instructions
- In a large pot, combine cauliflower, carrot, celery, onion, water and bouillon. Bring to a boil. Reduce heat, cover and let simmer for 15 minutes.
- In a large saucepan, melt butter. Stir in flour, salt and pepper until smooth. Slowly add milk and bring to a boil over medium heat. Cook and keep stirring for a few minutes until thickened. Reduce heat and stir in cheese until melted. Add in the bacon if desired. Stir into the cauliflower mixture.Enjoy!
